Roast Garlic Recipe for P2

At the request of another Challenger, here's my Roast Garlic recipe.

Preheat oven to 350
  • Line a glass roasting pan with aluminum foil, with enough extra at each end to make a tent over the garlic heads
  • cut the tops off several heads of garlic and place in the roasting pan cut side up
  • pour in enough water to keep the garlic from drying out, but not so much that they float in the pan
  • cover with the ends of the foil in a tent shape and bake for ca. 30min, until the garlic is very soft
  • let cool for a few moments, then squeeze cloves into a bowl and mash til smooth
  • store in the fridge and add (to taste) to anything you fancy

HELEN!!! THIS WAS FANTASTIC!!! As we discussed I love roasted garlic and if I smell the entire time while I'm dropping... WHO CARES - I'll look GREAT!!! I roasted up about 20 heads of garlic - they did take longer to cook. Not sure if it was my oven or that I chose to cook them in my Pampered Chef Deep Dish Baker - took about 55 min.

Anyway they are delicious even w/o the olive oil :D
